Pineapple Upside Down Cake


Ingredients

150g (5oz) butter or margarine
150g (5oz) granulated sugar
150g (5oz) SR flour ( or use plain flour with about a teaspoon Baking Powder)
2 eggs, beaten
grated rind of an orange
juice of 1/2 an orange

For Topping
432g (15 oz) Can of pineapple rings
25g (1oz) butter (or margarine)
50g (2oz) soft light brown sugar

Preheat oven to 180°C/350°F
Grease a 20cm (8in) cake tin

Drain pineapple and reserve 2 teaspoons juice
In a pan heat and melt the butter, sugar and reserved juice
Pour into tin and arrange pineapple rings on top
You can also add cherries at this point :)

In a large bowl beat cake ingredients until smooth.
Spoon over the pineapples and spread gently to the edge of the tin,
being careful not to disturb the topping too much.
The original recipe said bake for 50mins but I find this is too long,
so about 40 mins and check if a skewer or cocktail stick inserted in the centre comes out clean.

Allow it to cool for about 5mins.(not too long as the sugar mixture will harden)
Gently run a knife round the edge to loosen any topping that may have stuck to the sides. (The best bits)
Invert onto serving plate.
