Plum Cake

12 plums, halved and pitted
juice from one lemon
1/4 teaspoon cinnamon

1/2 cup soft butter
1 cup sugar
2 eggs

1 cup flour
1 teaspoon baking powder
1/4 teaspoon sea salt
1/4 teaspoon nutmeg
1/2 teaspoon cinnamon

Put plum halves in a bowl and squeeze the lemon’s juice over them, sprinkle on cinnamon and stir until all well coated. Set aside.
Mix together flour, baking powder, salt, nutmeg and cinnamon. Set aside.
Oven 350*F.
Cream together the butter and sugar.
Beat in eggs one at a time.
Now add flour in increments beating well between additions.
Batter will be thick.
Spoon into and un-greased 9 inch springform pan, smooth and level.
Drain plum halves.
Place plum halves in a circle around the edge of the pan then a smaller circle inside and one plum half for the centre.
Bake in middle oven at 350*F. for 45 minutes or until toothpick tests done.
Cool for 5 minutes the run a knife around the edge.
Then release the springform pan edge when cake placed on serving plate. Let cool for minimum of 10 minutes before trying to cut it, to prevent the cake from falling apart.
Serve it warm with fresh whipped cream or vanilla ice cream.

For a Gluten Free Cake- Substitute the regular flour(cup for cup) with Super Fine Chana Flour (chickpea flour). Available in the international aisle in most large grocery stores.
