Have never made bagels but was inspired by mbjigsaw's recent post of homemade Montreal bagels. They're slightly sweeter than their NY cousins, with a dollop of maple syrup in the dough and being boiled in honey water before baking...and they're baked on both sides. Love that the seeds are on both sides! :-))

LOL John, I noticed that and chalked it up to that favorite nuisance, auto-correct. Loathe what it does when I'm trying to text.

I would give anything to get my "hedge" cut...LOL....local salons have the okay to reopen....I'm guessing they're figuring out the precautionary protocols. ;-PPP Glad your garden hedge looks good....makes all the difference to see things looking nice. :-))

Nancy, I notice that predictive wrote "relish" for me!! It has done that before and I should have been ready for it. LOL

I got my hedge cut today, which I'm pleased with. :-))

Forgot to add: I used avocado oil, as that is what I keep on hand. Recipe calls for canola. Not sure if this makes any difference? They have a nice chewy texture.

Thank you, Mrs. Quinn. I'm delighted to have tried making them, and plan to make more soon.

They are more work than bread loaves.....not sure if they are "a lot" of work.
Dough prep is straightforward. Timing the boiling is a fussier step and they bake quickly, so the oven needs to be watched. After a few batches and figuring out what works for you it should get easier/faster. At that point I'd probably make two batches so there are enough to go into the freezer after enjoying however many fresh from the oven. :-))

mbjigsaw posted an entertaining video of these being made. Nice overview. The how-to differs a bit from a few of the recipe steps.

Batch size: I made 12 ...easier to divide
Cut and weighed each cut to make sure the parts were equal.
Rolled them to ~10" per the recipe, shaped while laying flat (not the longer pieces formed over the hand as in the video)
Gave the connecting pinch a twist in this second batch rather than just pinching (a couple of my pinched bagels in the first batch came apart when boiled). I think that's why the bagels in the photo cracked...doesn't bother me....just an observation).

Video mentions boiling them for ~3min and she has a pot full with the bagels on top of each other
Recipe says 45sec each side and only a few at a time, so they aren't on top of each other.
First time I boiled them exactly 45sec each side; second batch about a min each side. Both came out fine. Have not tried the longer time.

Recipe calls for boiled bagels to drain on a towel, then brushed with an egg wash before dipping in seeds.

Putting boiled bagels on my bamboo cutting boards was fine; they started to stick when using a towel.

Adding seeds right after removing from egg wash was a bit different....poppy seeds stuck pretty well, sesame seeds not quite so much.
Might be because I used a shaker to apply the seeds rather than dipping them. Maybe dipping presses them in better. Will try that next time.
Don't forget.....seeds are on both sides!!

Watch the oven! First side was done in about 8min; second side about 6min.
Plain bagels brown faster.

Once cool, I put them in freezer bags. They freeze beautifully. About 20-25sec in the microwave and they are thawed/warm and ready for butter or whatever. :-DD

Thanks for the inspiration, @mbjigsaw ! Made poppy and sesame so far. Will try making my own "everything bagel" topping and see how that goes.
