Country ham is a variety of cured ham, typically very salty. Country ham is first mentioned in print in 1944, referring to a method of curing and smoking done in the rural parts of North Carolina, South Carolina, Tennessee, Virginia, Georgia, Kentucky, Missouri, and other nearby Southern states (of the USA). Virginia ham is a country ham produced in Virginia (including the more-precisely-defined Smithfield ham); whereas "VA Style" refers to a curing style, not a location.
Country hams are salt-cured (and occasionally nitrite- and nitrate-cured) for one to three months. They may be hardwood (usually hickory and Red Oak) smoked, then aged for several months to 2–3 years, depending on the fat content of the meat. Country hams are not fully cooked, but preserved by the cure.

Hello ladies! I am sooooo hungry now too! I posted this after Jeri mentioned it! My friend Patrick ordered a whole one for Thanksgiving...expensive, but we just had turkey...and turkey sandwiches...and then turkey soup! We're "turkeyed-out!" :) Never had country ham, or red-eyed gravy...cannot wait! Thanks all! :)

Wow, Cracker Barrel, doesn't have country ham, that's crazy. Why would they have a Cracker Barrel, if you can't get the things there known for?

didn't know what it was. I used to buy ham biscuits there all the time. But that was
in Tennessee and Florida....

Guess we'll have to slice some big beef steak tomatoes and scramble some eggs too.

Great picture, Lori...I have 6 slices in the refrigerator.... I'm saving for a few days
cause we cooked it for 3 mornings when I was in TX. I love country ham on biscuits.
And soak the biscuit with a spoonful of red eye gravy ... and let's not forget the grits
with red eye gravy... you can buy country ham on Amazon.... whole hams or packaged
slices....sort of pricey... but great for a treat....
