Coconut is not one of my favorite foods - - and I just cannot stomach coconut filled chocolates. But for these cookies I used organic shredded coconut from a local health food store. I really can't detect any coconut flavor in the cookies; I think it mostly contributes texture. I think you could omit the coconut altogether without missing it.

The drawer pulls replaced the ugly originals shortly after I moved in.


I think they look plenty tasty. Didn't inherit my mother's taste for coconut, though, so I don't think I'll be making them.
I like your blue drawer pulls, too.


PS: Hanne, I bake because in most cases home made food tastes infinitely better than the "store-bought" stuff - - and I can control the ingredients. I avoid all food that has been excessively processed.


Hanne, why on earth are you ashamed? lf everyone did all the same things, wouldn't it be a dull world?


Why did I not imagine you baking?? Perhaps because we are alike in many ways and I would never dream of baking - let Bent who loves it do it!! I'm deeply ashamed, Varda!! You do VERY well, indeed! Thanks a lot!!

They are called "Everyday Cookies" from a cookbook I have mislaid (I'm good at that!), but I keep a photocopy of the recipe tacked to my fridge. Here it is, slightly edited:

1 cup butter, 1 cup granulated sugar, 1 cup light brown sugar, 1 cup vegetable oil, 2 eggs, 1 tsp vanilla, 3-1/2 cups all-purpose flour, 1 tsp crm of tartar, 1 tsp baking soda, 1 tsp salt, 1 cup crispy rice cereal, 1 cup quick-cooking oats, 1 cup shredded coconut, 1/2 cup chopped pecans. Follow the usual procedure, and drop by teaspoonfuls onto ungreased cookie sheet; flatten slightly. Bake at 350F on lower shelf of oven 5 to 6 minutes, then move to middle of oven and finish baking until lightly browned, about 5 minutes.

I used all brown sugar, more pecans, some wheat germ and flax meal (I like to console myself that they are nutritious as well as tasty!) A cup of butter AND a cup of oil sort of threw me, at first, but it works well. Fresh coconut is vastly better than the unrecognizable product widely available.


Ppm, you are making me drool. You and I both know that the best tasting food does not always have to look like a magazine shoot! With your ingredients and plenty of butter, I can smell them and I can taste them!!! If you want to show the recipe, I'll make them, but quite understand if you don't. Thanks for a TASTY puzzle.


Not the prettiest cookies, but they taste pretty good. Recipe includes Rice Krispies, coconut, pecans, oatmeal - - and plenty of butter!
