You are welcome eaglefeather. I believe in eating healthy without GMO's as I am a strong believer in natural foods. I am not a member of weight watcher but have seem lots of recipes listing points.

Thanks yellowgal. I am a huge parsley fan so would use more of that than mint. It is good cooked like rice, cooks faster and while it has more calories than white rice, it also has more protein.

Looks tasty to me . . . me being fairly new to quinoa, looking for recipes. Since I'm not a mint fan, I'd probably substitute a little fine chopped red pepper. Do you know if quinoa has less calories than rice? Thanks!

Actually, they sound rather good, I'm going to give them a try (it is the word "skinny" that scared me)!

Spring Herb Quinoa Patties

2 cups cooked quinoa

2 eggs

2 Tbsp green onion, chopped

2 Tbsp fresh mint, chopped

2 Tbsp parsley, chopped

1/2 cup grated cheese, I used Gruyere cheese

1/2 cup bread crumbs

1/4 tsp. salt

In a large bowl, slightly whisk eggs and add green onion, mint, parsley, cheese, bread crumbs and salt. Mix well. Meanwhile cook quinoa according to package directions and gently add 2 cups quinoa to your egg mixture until well combined.
Heat a large nonstick skillet on medium heat and drizzle a bit of olive oil in the pan. Using your hands, form 2-inch patties making sure they are tightly packed, and place onto pan. Cook patties about 3 minutes on each side or until golden brown. Serve immediately and enjoy!
