A beautiful rose. I lived in Georgetown as a teenager for five years and watched the original Granary being built. I lived in a large victorian house on the corner about 200 yards from the Granary (in the middle of what is now a boat yard) with it's back to the river. It had 14 rooms and my dad rented it for $25 a month (1946 to 1951). Did you also eat at the Kitty Knight House across the river?

Forgot to mention when I was by here yesterday Rosie that this is a lovely rose and beautifully presented. The vibrant oranges are so "Jan". ☺

I bind with a knife to keep the dough cool, like with pastry or scones. The bummer about developing recipes is the waste of ingredients when it doesn't work how you want it to. That's part of the price of learning and also why I won't just give it all away to the first person who says, 'Oh, give me this.'

GF will mostly taste a bit different. If you get the flour right, try just swapping it for wheat flour in a simple, tried recipe and adding xanthan as I suggested. GF mixtures need to be a bit wetter than wheat ones so don't keep adding flour to make a manageable dough. I grind my spices by hand just before using, so they're stronger. Costs less for more taste. Try using a bit less with GF flours. I am on FB as Zena Herbert, Bedford, UK, if you want to catch up with me there.
