Born into a modest family in Paris, Gilbert was apprenticed at age 13 to decorative painter Eugène Adam. He furthered his artistic education through evening classes with Pierre Levasseur at the École de la Ville de Paris. His talent gained early recognition with his debut at the Paris Salon in 1873.
By the early 1880s, Gilbert had established himself as a leading realist painter of Les Halles, Paris's central market, capturing its dynamic atmosphere with meticulous detail.
Gilbert's work evolved over time, incorporating lighter palettes and impressionistic influences, especially in his portrayals of bourgeois women and children in leisurely settings . His contributions to art were recognized with a silver medal at the 1889 Exposition Universelle and the prestigious Prix Bonnat in 1926.
In 1897, he was appointed Chevalier of the Légion d’Honneur . Gilbert continued to exhibit at the Salon until 1933 and served as a Salon juror . He passed away in Paris in 1933 and was laid to rest at Montmartre Cemetery ♥
