Okay, Mimi. lol Some years ago, my older sister and my younger sister both made some crawfish etouffee for me to judge which was better...or which did 'I think' tasted better. I couldn't lie; my younger sister had the better etouffee. Let me tell ya...there was a lot of etouffee up in dat der house dat day. =P
Oh BJ, gumbo is so yummy. I think each person makes it a bit differently. My son-in-law makes the best I've eve tasted, and I like mine second best. I was raised putting the rice on top, but he serves like you do, over rice. Anyway it's all wonderful! And I use the frozen crayfish in my gumbo - just lazy I guess. Fresh crayfish is for feasting! I'm going to try to find some pictures of my family doing just that!
Good timing, Mimi. Yesterday I made a big pot of gumbo with plenty of scallops and shrimp. None left. My friends loved it. I serve it over rice. When it is fully cooked it does not look like soup anymore. Did you know you can not get fresh crayfish in Florida. They are fully cook and frozen. Not the same.
Snowbunny's right, it is a Mardi Gras favorite! But then crawfish is a favorite all the time when it's in season - yum! Mardi Gras is a time for BBQ, hot dogs, and anything yummy, finished off of course with King Cake! Thanks Snowbunny and I hope you get LOTS of yummies in March.
