I use to work in a pizza parlor and got really good at tossing the dough up in the air with it spinning. :) Was a fun job.
I sure wish we could do that PG, Jenny and I messed up a few pizzas and gave up. There is an art to it, this is more work but we have it down to a T now, maybe when we meet you can teach me!

I make mine on a pizza shovel and preheat the stone and slide everything off onto the stone. Got use to doing it that way from working in the pizza shop when I was a kid when you had only wood fired ovens.
Pizza Dough......By Martha Stewart, been using for years, works for us or use your own.
2 3/4 cups flour
pinch of salt
1 cup warm water
1 envelpoe of dry yeast
pinch of sugar
2 tbls olive oil.
mix yeast and sugar in water and leave until proofed. Add oil.
Put flour and salt in processor, mix a bit then with machine running pour liquid in until forms a ball. Turn off, knead a little bit with some flour and place in an oiled bowl to rise, about an hour or more if you like. cover with a towel. When you are ready, cut in half, makes two 14" thin pizza crusts.
When ready to use, roll out and put in pizza pan or stone. We use the stone, place in oven at 500 F. Do not pre-heat oven, could crack the stone. When stone is hot after about 15 minutes, pull out and quickly place toppings. I did not use sauce last night, tried something different.
Saute 2 or 3 tomatoes sliced, 1 large onion sliced and 1/2 pound of mushrooms sliced. Not too long, just to get started, throw 3 or4 sliced garlic in just before turning heat off. Salt and pepper and some oregano and pepper flakes to taste.
To assemble, put three or four handfulls of mixed mozzarella and goat or sheep cheese. Then put the sauteed ingredients around finishing with 2 or 3 handfulls of mixed parmesan and gruyere cheese on top. Put in oven for 13 minutes, check and the eat! Oh I chopped fresh basil and threw on top after out of the oven. Sorry, I make these up as I go so the measurements are not specific. You can judge and use what you have and like. This was a very pleasant change from the usual one where I make a tomato vegetable sauce for the first layer, then place mushrooms and onion slices with chopped garlic, then finish with mozzarella and parmesan cheeses combined. Hope you enjoy it!
