One can go a little bit batty contemplating the meaning of this day. No-one can be certain as to the meaning of this very nutty day. There are some obvious possibilities:

A day which celebrates nutritious and healthy nuts (food) of all kinds. Celebrate today by eating lots of nuts, either as a snack, or in baked goods.

I would never force anyone to eat them either, specially not kids! But I like their taste - so it's probably a good thing I don't eat apples all not often.

I used to make shakes and never included the core. Especially since I gave them to my kids.

Scarily that means... 18 apple cores in one sitting could kill someone. With so many people using NutriBullet style shake makers it would be quite easy to do!
