Mary, beetroot is a salad vegetable, which grows as a root and has to be boiled until soft and its a dark red colour, I love it au natural, but many people like it with vinegar and also pickled. You can make soup with it, and in some countries they serve it cold and call it Borscht. See the weblink here:

I love the mixture of colours and the silver and "beetroot" red go wonderfully together. The two bottom ones would make perfect Christmas ornaments. :))
