Yes, Dave, the white edges on the watermelon (yellow on what looks to be a lemon?) are the rind. There is quite an art to fruit/vegetable carving known to the Japanese as Mukimono. I've seen some beautiful works in Thai restaurants, as well. Thanks for sharing these...

The mushy inside of the watermelon must have been very difficult to do. Maybe it was frozen first?
